Prawns Biryani:

Ingredients For Prawn Masala:
Prawns-500gm(shelled&cleaned)
Onions – 3(chopped)
Tomatoes – 2(chopped)
Ginger/Gralic paste– 2tbsp
Green Chillies – 5(chopped)
Fennel seeds (Perumjeerakam)- 1/2 tsp
Chilly powder-1tsp
Turmeric powder – 1/4tsp
Coriander powder –3 tsp
Garam Masala - 1 tsp
Biryani masala-1/2 tsp
curry leaves-few
Cilantro - few (chopped)
Mint leaves -few (chopped)
Salt
Oil
For the marination :
Red Chilly powder – 1 tsp
Turmeric powder – 1/4 tsp
Salt –to taste
Method:
Make a smooth paste of ingredients &marinade it on the cleaned prawns for 30 minutes.After 30m,Heat oil in a pan &shallow fry the marinated prawn(add curry leaves it increase d taste)and fry it until they turn light brown ,remove frm fire &keep it aside.

Ingredients for rice:
Basmati Rice – 2 cups
Cinnamon (Karuva patta)- 1inch piece
Cloves (Grambu)- 6
Cardamom (Elakka)-4
Bay leaves (Karuva Ila) – 2
Cashewnuts – 10
Raisins– 2 tbsp

Method:
Heat oil in a pan fry the chopped onion until translucent,then add ginger,garlic and green chillies and saute it for 5-6 minutes.Add coriander powder,turmeric powder,chilly powder and fry for a while.Nw add chopped tomatoes,curry leaves,biryani masala,garam masala powder and salt,fennel seeds stir and mix well .Cook until tomatoes turn soft,and finally add fried prawns.mix well and cook for 15m in low heat,stirring in between.Finally add chopped coriander and mint
leaves and remove from heat.Kept it aside.
Heat little ghee in a pan and lightly fry the rice ,cinnamon, cloves, cardamom and bay leaves for few minutes.Then add 3 and 3/4 cup of water,salt and allow it to cook on a medium heat.When it is cooked well,remove frm fire&spread it on a flat surface.Heat ghee in a big pan and fry the cashewnuts and raisins,remove it and keep it aside.
In a big pan spread half of thebiryani rice,sprinkle sme garam masala ,mint &coriander leaves Now add a layer of the prawn masala.Again make a second layer rice,sprinkle the powders&leaves and then prawn.Finally add rice &top it with garam masala,fried cashews and raisins.Cover it with aluminium foil &cook for 5m in low heat .switch of the stove.serve hot with raita &achar
